TEKNOLOGI ENKAPSULASI: TEKNIK DAN APLIKASINYA

Abstract


Enkapsulasi adalah suatu proses yang mampu mempertahankan sifat fisik, kimia, dan biologis dari suatu senyawa aktif atau bahan inti dengan cara melapisinya di dalam suatu bahan penyalut. Selain itu enkapsulasi juga menawarkan solusi untuk mempermudah penanganan bahan dengan mengonversi bentuk bahan dari cairan menjadi solid serta memberikan manfaat control-release. Dengan demikian penggunaan suatu bahan dapat diperluas dan dimaksimalkan. Saat ini terdapat banyak pilihan proses enkapsulasi yang bisa digunakan seperti: koaservasi, ko-kristalisasi, spray drying, spray cooling, ekstrusi, dan lain sebagainya. Teknologi enkapsulasi sudah banyak dimanfaatkan di banyak bidang, di antaranya pada bidang industri makanan dan minuman, bidang pertanian, dan bidang farmasi. Artikel ini bertujuan untuk membahas tentang enkapsulasi, teknik-teknik enkapsulasi yang bisa digunakan, serta penerapannya di berbagai bidang yang berbeda. Dari studi literatur yang dilakukan, didapatkan bahwa tidak semua teknik enkapsulasi bisa digunakan untuk suatu tujuan yang sama. Pemilihan teknologi enkapsulasi perlu mempertimbangkan jenis substansi yang akan dienkapsulasi dan tujuan penerapannya.
